Summer for me means dinner on the grill: tuna, potatoes, and con on the cob. With some fresh sliced tomatoes on the side.

Good lord in heaven - if anybody needs to win this prize it's me. As you well know I can't cook my way out of a wet paper bag, and if it wasn't for the Holy Trinity of Takeout (Boston Market, Dominos Pizza, and Kit's Thai Kitchen) my family would undoubtedly starve.

Ooops, I got so excited, I didn't follow the directions! Okay: grilled salmon, couscous, corn on the cob, fresh tomato and red onion salad, glass of ice cold wine! I'm posting this on facebook NOW! ;-)

Ribs rubbed with spices & baked 2 1/2 hrs at 300 & then basted w/bbq sauce and broiled for 5 min; corn on the cob; salad; summer berries with vanilla ice cream; savignon blanc! Easy peasy and delicious!!

Shredded zucchini fresh from the garden sauteed with garlic and evoo. Toss with spaghetti and shazaam! Easy summer meal.

Wait, Meg -- your fresh basil pasta dish sounds heavenly, will you share your recipe?

I'm going to echo K's sentiment: summertime equals BBQ, which equals EASY in my book! (Especially because the men feel that grilling is THEIR domain and therefore take over the cooking: how easy is that?!)

My secret to easy and delicious grilled chicken: marinate in Wishbone Italian Dressing for at least an hour prior to cooking. The dressing cooks away so the chicken doesn't taste like italian, but it's fabulously moist and flavorful.

An equally easy and delicious side is asparagus: just drizzle with EVOO, salt and pepper and either broil in oven or cook on grill: SO good!

Oh my gosh, this is so cool! Due to finances, I've spent the last year really trying to learn to cook a lot more -- I need all the help I can get!

My go to easy meal? Pizza! Or a nice hearty salad with chicken, fruit and nuts. Or better -- my husband cooks!

Dinner and delivery x six? Awesome. Although I love to cook working full time has turned it into a rushed chore.
My favorite summertime meal is grilled chicken marinated with soy-vay, farmer's market corn on the cob and a green salad with avocado and fresh fruit.
